HOISTING ATTACHMENT POINT

I am going to start hoisting my boat rather than ramp launch. Doesn't seem that I have a aft attachment point for the lifting strap? Should there be an eye in the aft cockpit?

Several U20s were built with no rear pad eyes for lifting.  I'd suggest using a line (5/16") looped under the top rudder gudgeon with the rudder pin in place.  You will have to play with the length until you have the stern lifting slightly higher than the bow to keep the mast and rig forward of the crane.
